Rava Kesari

Rava Kesari - A simple sweet dish that can be made in a jiffy. It also works well as a tea-time snack for kids and adults alike. Often kesari is prepared for festive occasions.


  • 1 cup rava

  • 1 cup sugar

  • 2 ½ cups water

  • 5 tbsp ghee

  • 10 raisins

  • 5 -6 cashews

  • ¼ tsp cardamom
    powder

  • 1 tsp saffron soaked in 1 tbsp warm milk

Take a heavy bottomed pan and heat the ghee. Boil the water in a separate pan. Add sugar to it and bring to a boil. Roast rava in it on a slow flame till it exudes a subtle aroma. Add the boiling water to the rava stirring continuously to avoid lumps. Ensure that the rava is well cooked and the sweetness is right. Fry cashews and raisins in a little ghee and add to the rava kesari. Add the cardamom powder and saffron for flavoring.

You can add a tsp of ghee after the kesari is made as it imparts a heavenly aroma. You can skip the cardamom powder and instead opt for saffron or pineapple essence. Do not add the sugar before the rava is cooked through.


The rava kesari is known in Maharashtra as Sheera. This is enjoyed as an anytime snack. It is often prepared as a prasad for satyanarayana puja.

1/2 cup rava
1/4 cup Ghee
2 cups Hot Milk
1/2 cup Sugar
1 Ripe Banana
1/4 tsp Cardamom Powder

In a thick-bottomed kadhai, melt ghee and roast rava in it. Allow the rava to turn golden in color. Add chopped banana slices in another kadhai with a bit of ghee and allow it to soften and caramelize. Add hot milk to the rava and allow it to cook on a low flame. Add sugar and banana and cardamom powder. Cover and allow it to cook for about 5 minutes.
